Has anybody ever made this?



Vasilopita Recipe – Greek New Year’s Cake Vasilopita (Greek: βασιλόπιτα) is eaten to mark the festival of new year. It brings good luck.

Ingredients

6 cups self raising flour
6 eggs
2 cups sugar
1 cup reduced salt butter
2 tablespoons baking powder
1 cup fresh orange juice
1 finely grated rind of orange
2 tablespoon cognac or vanilla sugar
Raw slivered almonds
1 coin wrapped in aluminum foil
Icing sugar (optional)

Method

Preheat oven to 180C
Beat the egg yolks in a bowl together with the sugar until creamy, then add the butter and beat together.
In a separate bowl, beat the egg whites until white and frothy.
Add egg whites to the mixture, along with the orange juice, orange rind, baking powder, the vanilla sugar (or cognac) and combine gently. Add flour gradually and beat on a slow speed until very smooth and thick consistency.
Place the mixture into a greased round tin (30cm) and sprinkle over the almonds. Insert the coin into the batter so it is completely hidden, then bake for 40-45 minutes until the cake is golden.
Check cake after 30 minutes by inserting a skewer in the centre. If it comes clean the cake is ready.
Remove from tin and allow for cooling. Sprinkle with icing sugar.
Cut and serve starting with the most senior family member and see who gets the lucky coin for the year ahead!
